Despite what its name may suggest, Italian wedding soup by no means has to be consumed at a wedding. In fact, "wedding soup" gets its name from the "marriage" of ingredients in the dish, specifically the intermingling of meat and vegetables.
In this version of the Italian wedding soup, you'll be adding meatballs made from beef shank, celery, carrots, and onions for the broth.
