Sonya McDaniel demonstrates a good meal for the family which can be done in 30 minutes. She prepares "sausage and tortellini soup". Ingredients: 1 lb. ground Italian sausage, 1 head cabbage, 1 can of beef broth, 1 can of Italian stewed tomatoes, 2 cups of water, 1 can of French onion soup 1 package of fresh or frozen tortellinis, shredded Parmesan cheese. Brown the Italian sausage in a skillet. Remove as much of the fat as possible. To do this, dish the sausage into a sieve and run under water. Spread the sausage onto a paper towel and blot with another paper towel to absorb the fat. There are a couple of cooking tips for removing fat after the dish is completed. One is to put ice in a paper towel and run across the top of the soup. The second way to remove fat is to use a lettuce leaf. Run it across the top of the soup and it will absorb the fat. In a soup pan, add the beef broth, stewed tomatoes, onion soup and the sausage. Add 2 cups of water and stir. Add 2 cups of chopped cabbage and continue to cook for 8 to 10 minutes on simmer without a lid. Now add the tortellinis and bring heat to a full simmer and cook until tortellinis are done. This will take about 6 to 7 minutes. Soup is done. Dish up into a bowl and garnish with Parmesan cheese. Serve with a good Italian bread. What a great dish on a cold evening with the snow falling outside!
